Oven-Roasted Corn

As far as I am concerned, there is nothing like taking freshly grilled corn off a grill, slathering it with butter, and taking that first bite.  However, this past summer we haven't been grilling as much as we once did.  Since moving to DC, the only place we have to grill is on our rooftop and, while we do love to sit up there and have a leisurely dinner, lighting coals in the wind is no easy feat. 


This is where my latest trick comes in handy.  I have found a way to eat an ear of corn without using neither the microwave nor the grill and it is so easy that this really isn't a recipe at all. Here is what you have to do:
  1. Preheat your oven to 350 degrees.
  2. Take your ear(s) of corn, husk and all and place them in the oven.
  3. Take them out after 25 minutes, remove husk, and garnish.
It is that easy.  Now, you don't want the fat and calories from butter but would like to make your side dish a little more interesting?  No problem.  Just cut open a key lime or a lime if you don't have a key lime on hand, squeeze some juice on it and sprinkle with sea salt.  I love summer produce.

Calories:  Approximately 77 calories in a medium-sized ear (about 7'' long).
