Food Blog Friday: Thai Jicama Salad from Cookin' Canuck




This week's blog is written by a fellow Canadian expat living in the United States.  It is one that I keep stumbling upon when searching for recipes.  Every time I landed on it, I would always tell myself that I should read it regularly.  It is well-written, the pictures are gorgeous, and the recipes all sound amazing.  However, for whatever reason, I never did subscribe to it and I eventually forgot that Cookin' Canuck even existed--truly my own loss.  After all, I love salads and Cookin' Canuck has one of the best-looking salad recipe collections I have ever seen.  But I digress.

Well, last week I decided I wanted a light Thai salad to accompany my Thai Basil Chicken.  My search for a salad led me, once again, to Cookin' Canuck.  This time, not only did I subscribe, but I also made the Jicama Salad recipe. It tasted just like the refreshing jicama salad I always order in Thai restaurants. Success!

Now, will I be making this one again?  Of course.  However, in the future, I will grate the jicama instead of slicing it and I will add in grated carrot and cucumber to make it even more like the ones I have had in restaurants.
